Pumped about Pumpkin

It really has been all about pumpkin in the EDBS house lately!! Between pumpkin muffins, donut holes, and french toast, I have been using this fall favorite in most of my recipes!

This week is no exception!!! On Monday night for class I  made Mini Pumpkin Spice Donuts with a Maple Glaze! I got really excited about donut making and soooo last Thursday I went and bought myself a mini donut pan… OMG best thing ever.. mini donuts are the cutest thing ever.. and they are small so basically guilt free.. right? I adapted the recipe from Kristin’s recipe… and it got rave reviews!

Pumpkin Spice Donuts

130 grams (~1 cup) all purpose flour (I used white whole wheat)

1 teaspoon baking powder

1/4 teaspoon baking soda

75 grams (2/3 cup minus 1 Tablespoon) granulated sugar

1/2 teaspoon cinnamon

1/2 teaspoon salt

2 Tablespoons cold butter

1/4 cup buttermilk

1/4 cup pumpkin

1/2 teaspoon vanilla extract

1 Tablespoon pure maple syrup

1 egg

Preheat oven to 350 degrees. Sift flour, baking powder and baking soda into a large bowl, then stir in sugar, cinnamon and salt. Add butter and, using your fingers, work it into the dry ingredients until it reaches the texture of coarse sand. In a separate bowl, whisk together buttermilk, yogurt, extract, syrup and egg. Add to dry ingredients and mix together until just combined. Do not overmix. Transfer batter into a ziplock bag, cut off one of the corners, and pipe batter into a non-stick sprayed doughnut pan. Bake for 8-10 minutes, or until batter has set and is springy when touched. Immediately remove to a cooling rack. Dip warm doughnuts into maple glaze and allow to cool.

Maple Glaze

1/2 cup, maybe more, powdered sugar

3 Tablespoons, maybe more, pure maple syrup

Add maple syrup to 1/4 cup powdered sugar and stir until smooth. Continue to add powdered sugar until desired consistency is reached. Add more syrup if glaze gets too thick. Dip doughnut tops into glaze.

These were so yummy and the perfect quick breakfast or snack… because they are baked… and I used whole wheat flour… so they are healthy?

Tonight for our double class tomorrow I made Pumpkin Snickerdoodles!!!! Yea they exist… and they are the BOMB

Pumpin Snickerdoodles

2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1 3/4 cups sugar, divided
2 sticks unsalted butter, softened
1 large egg
3/4 cup pumpkin puree
2 tablespoons ground cinnamon
 
Preheat oven to 400 degrees Fahrenheit.

In a large bowl, whisk together flour, cream of tartar, baking soda,  salt and pumpkin pie spice; set aside.  In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and 1 1/2 cups sugar at medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the egg and beat at medium speed until combined, about 30 seconds. Add the pumpkin puree and beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed.

Place the remaining 1/4 cup sugar and cinnamon for rolling in a shallow bowl. Roll a heaping tablespoon of dough into a 1½-inch ball, roll the ball in the sugar mixture, and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart

Bake the cookies, one sheet at a time, until the edges are set and just beginning to brown but the centers are still soft and puffy, 10 to 12 minutes, rotating the baking sheet halfway through baking. Cool the cookies on the baking sheets about 5 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.

These were delicious! I think everyone will enjoy them tomorrow! soft, chewy with a hint of pumpkin! Perrrrrfection!

Cookie Monster Post

Once a week posts are pathetic I know.. But please forgive me, second year is HARD… like really hard and there is so much work to be done that the poor blog slips to the side. I have of course been cooking and baking up a storm due to my stress so I have many things to share with you.. just not the time to share it! So tonight I want to share two cookie recipes in order to plead for your forgiveness!!! Yes I have been quite the cookie monster lately.. after all I need to cargo load for my race Sunday… duh

 

First up is Alice’s Best Chocolate Chip Cookies… and man were these good!!! I found them via Two Peas and Their Pod, but check out Alice’s blog because it rocks as well!!!

Alice’s Best Chocolate Chip Cookies!!

1 cup (2 sticks) salted butter, softened
1/2 cup sugar
1 1/2 cup brown sugar
2 eggs
2 tsp. vanilla extract
3 cups (12 oz) all-purpose flour (Alice says to weigh the flour, but I didn’t have a scale.. oops)
1 tsp. smallish-medium coarse sea salt
1 tsp. baking soda
1 1/2 tsp. baking powder
2 cups/16 oz of semi-sweet chocolate chips

Preheat oven to 350 degrees.

Cream butter, sugar, and brown sugar until it is nice and fluffy which should take about 5 min using a stand mixer! Make sure the mixture gets VERY creamy.

Add the eggs and vanilla and beat for an additional 2 minutes. Add baking soda, baking powder, salt, and flour until cookie batter is fully incorporated. Finally add chocolate chips until well distributed. The cookie batter should be somewhat thick. Drop about 2 tablespoons of dough or use a medium cookie scoop and plop the batter onto a baking sheet lined with parchment paper.

Bake for 12-14 minutes until the edges are nice and golden brown. Leave on cookie sheet for two minutes, and then pick up parchment paper and let cookies continue to cool on the parchment paper for another 3 minutes! Then ENJOY!!!!

And next up Vanilla Sugar Cookies with MnMs!!

  • 2 1/3 cups plus 2 tablespoons (11-ounces) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup (1 1/2 sticks; 6-ounces) unsalted butter
  • 1/2 cup plus 2 tablespoons (4-ounces) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • MnMs if desired

In a medium bowl, sift together the flour, salt, and baking powder. Set aside. In the bowl of a standing mixer fitted with a paddle attachment, combine the butter and sugar and beat on medium speed until light and fluffy. Add the egg and vanilla and beat until combined. Add the flour mixture in 2 batches, scraping down the bowl after each addition. Beat until the dough just comes together, being careful not to over mix. Turn out the dough onto a lightly floured surface. Form the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.Place the ball of dough between 2 pieces of parchment paper and roll out to 1/4-inch thick. Keeping the dough in the parchment, transfer to a cookie sheet and place in the refrigerator for at least 1 hour. Cut out the cookies in the desired shapes and place on a half-sheet pan lined with parchment paper or an un-greased nonstick cookie sheet, at least 1-inch apart. Press MnMs into cookies if using! Transfer to the freezer and chill for at least 15 minutes or until they are firm.

Bake until the cookies are light golden brown, about 10 minutes. Let cookies cool completely on the sheets before decorating.

* I added dark chocolate mnms to some of mine but pressing them into the dough balls before baking! You can do this with any topping you like!

*Cook’s Note: They will still be soft when they come out of the oven and may break or become misshapen if they are moved off the sheets before cool.

YUm both these recipes were crowd pleasers…especially the sugar cookies! I brought about 44 into class today and came home 1.5… MnM Sugar Cookies FTW!!

Last Weekend of Freedom

Happy Monday everbody!

Today is a big day but before I get into that… I wanna talk about this weekend!

This was our first weekend all back together before classes started and it was great! On Friday we kicked the weekend off with a BBQ at Ted’s! I came prepared armed with all of this

We grilled and caught up before it was time to start the real fun of the evening…. Beer Games! We had First Year vs Second Year flip cup… and for the most part the Second Years dominated!!! I surprised everyone by actually ebing quite good at flip cup.. because I am awful at pong!

  It was a good night full of friendly competition and great food!

Saturday started out strong with the Michigan State game and breakfast with Ryan, Connor and one of their friends Andy! All three of them are big State fans, and it was fun to watch them get so excited about the game!

After leaving the boys, Collen and I went on a bike ride… or well we tried to go on a ride! Tina decided to be a diva drama queen and break halfway into our ride!!! It was a biketastrophe! Thankfully Ted has a bike rack and we were close to his place so he could rescue us and bring us back to my place! We rewarded him with fro yo!

I came home from fro yo heaven in time to get ready and head to Kat and Andrews for our usual marathon of College Game Day! I love college game day. even if I didn’t go to a school with a football team.. it really is my favorite day! We had left over cookies, wings, chips and salsa, and of course beer, well and coffee for me! I never drink coffee but I was exhausted by 5pm on Saturday!

We went from Kat’s to Elana’s new amazing loft to pregame before going out! Elana’s new place is amazing with a sick rooftop that of course we took advantage of! We love rooftops, which was apparent when we spent our night basically the only people on the rooftop of the bar we went to!

Needless to say it was a great weekend spent iwth great people! Yesterday I went on an hour walk with my aunt Alice! It was a beautiful day outside and as usual I love talking to her about everything. She is a PT and so there is a lot of common ground with what she does and what I want to do! Finally I was able to relax at home and watch football while getting all my stuff together for my upcoming classes, and doing some reading!

Also yay the BEARS WON!!!!!

Now I am off to finish getting ready! See you after class!

Cookie Palooza

It is cookie madness in my apartment!! Tomorrow is our BBQ with the new first year at Ted’s so in true tradition I am baking up a storm of cookies and cookie bars!!!

Tonight I have made Oatmeal Chocolate Chip Scotchies, Peanut Butter Oatmeal Chocolate Chip Scotchies, and Oatmeal Raisin cookies… can you tell I love oatmeal cookies?

I used the same base for all of the cookies and split up the batter into three different batches and added in the different toppings!

Vanishing Oatmeal Raisin Cookies

adapted from Quaker Oats

Ingredients

  • 1/2  cup (1 stick) plus 6 tablespoons butter, softened
  • 3/4  cup firmly packed brown sugar
  • 1/2  cup granulated sugar
  • 2  eggs
  • 1  teaspoon vanilla
  • 1-1/2  cups all-purpose flour
  • 1  teaspoon baking soda
  • 1  teaspoon ground cinnamon
  • 1/2  teaspoon salt (optional)
  • 3  cups Quaker® Oats (quick or old fashioned, uncooked)
  • 1  cup raisins
  • If not using raisins, use chips of choice.. I used semi sweet chocolate chips and butterscotch chips
  • I also used 2 tsblspn of peanut butter in one batch

Preparation

Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. *Or add any other toppings you use such as chips or peanut butter

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

I sneaked a bite of one of the oatmeal raisin cookies, soft and chewy… soooo yummy! My friend Ian requested these so I  hope he enjoys this batch! The other two cookies were requested by my friends today after I had brought them on Monday to Ted’s BBQ!

I can’t wait to get started on the bars tomorrow! I am making these smore’s bars again, after they were also requested as a follow up to Monday’s version! I am also using another one of Maria’s recipes… Peanut Butter Chocolate Chip Blondies!!!

In other news I had a delicious salad after a great six mile tempo run! I did each mile sub 9:30 and my last mile was 8:09!!!

Grilled chicken marinated in tomato sauce

Spinach and Romaine Mix

Orange pepper slices

Fresh Mozzarella chunks

mmmmm so delicious!

Ok now that I have made you all hungry I will leave you for the night! I am very sleepy but am too excited for the Roomies return tonight to sleep!!!!!

To Paleo or not to Paleo

Sooo I have been a little obsessed lately… with my weight.. I blame it on the fact that I am in a bikini  a lot now… oh well. Yesterday I did 3 work outs! Well two were spontaneous I am bored why not run 3 miles at 6 pm and elliptical for 30 min at 10 pm hahaha! I think it is because in the past few days my eating has been off! Monday night my friend and I decided to go for late night Wendys… now before this year I think the last time I went to Wendy’s was like 3 or 4 years ago! However he wanted it, and I wanted a Frosty… man those things are soo good! And then yesterday I had fro yo and cookies! ok a cookie… but also lots of dough! Any way after eating another cookie today, followed by cherries I realize I eat A LOT of sugar. Albeit it is usually in the natural form aka fruit as I have almost completely stopped eating fake sugar, because I have a cookie or baked good maybe once a month, I also eat a lot of fro yo! I have been hooked on Cely’s blog lately and she has started the Paleo diet. I love Cely I think she is actually the funniest person in the world, and her blog is on my daily obsessive list along with Janaeand Julie! ANyways I have been toying with the idea of Paleo for a few weeks now… it is basically eating the way the Cavemen ate… but I don’t know! I really don’t like to be on an actual diet because well I hate feeling restricted.. and on Paleo… I can’t eat dairy… which means no FRO YO!!! ahhh the horror the horror!! SO yea.. that and I know.. I am thin, I have a good figure, but I would LOVEEE to have abs!  like real ones hahaha… sooo maybe I will just cut down some sugar, and portion control!

Ok sorry about this random tangent… I would love if body issues never existed… which is why I love this post Julie wrote about the comparison trap! Part of my problem is that I compare myself with others too much!! Really it’s time to embrace ME! ok good self-talk hahaha

In other news…. lets talk about my lunch!!!

Soo when I lived in Italy there was a sandwich place by the NYU campus… Bar Lidia….OMG…this place was like crack, they had the best sandwiches and sold massive vats of wine for like 5 euro…. win

I tried not to go there very often because it wasn’t exactly the healthiest thing on the planet but when I did I always got the same sandwich! Turkey and prosciutto with pesto and mozzarella!

Today I recreated this sandwich that I haven’t tasted in 4 years completely by accident! On whole wheat bread I spread homemade pesto, topped with muenster cheese, turkey and prosciutto and avocado! I put the sandwich on the GF grill for a few minutes.. wow… this sandwich was amazing!!! I served it with grape tomatoes and cherries!!!

I also wanna share with you guys my homemade pesto recipe! I love pesto… like can just eat it with a spoon, which maybe kind of weird but whatever! I found this recipe a few years ago on Cooking Light and have literally never looked back… both my mom and I are hooked on this stuff!

Macadamia Nut Pesto

From Cooking Light
3 cups fresh basil leaves

3 tablespoons roasted macadamia nuts

3 tablespoons grated fresh Parmesan cheese

2 tablespoons olive oil

3/4 teaspoon salt

1/2 teaspoon freshly ground black pepper

The recipe also calls for half and half and lemon juice but I have never used these, although now I do want to try lemon juice! If you are looking for a fresh new pesto that is slightly lighter give this a whirl!

Now I have mentioned cookies… I made cookies last night… soooo good! I got the recipe from Kim… you know I love MONSTER COOKIES and these had MARSHMALLOWS IN THEM!! Yes Please!!!

Adapted from Lovin From the Oven and Pinch of Yum

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1  stick unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 1/2 tablespoon vanilla extract
  • 1  cup peanut butter
  • 2 cups quick-cooking oats
  • 1 cup semi sweet chips
  • 1 cup  butter scotch chips
  • 1 cup miniature marshmallows
  1. Preheat the oven to 350 degrees F.
  2. Stir together the flour, baking powder and baking soda in a large bowl.
  3. Cream butter and both sugars until fluffy. Beat in the eggs one at a time, then add the vanilla.
  4. Add the peanut butter and mix until smooth. Mix in the flour mixture until just combined.
  5. Stir the oats and chips into the dough with a wooden spoon.
  6. Drop the dough by heaping tablespoonfuls onto baking sheets, about 3 inches apart. Push in 4-5 marshmallows into each cookie dough ball. Bake for about 8-10 minutes, until golden.

Cinco de Mego!

Yea… that was lame but Im slightly delusional from exhaustion/ cold coming in/ taco salad/cookie dough… get the picta?

Today was a full one! I woke up early to drive Liza to Kathleen’s, who was driving Liza and Lana to the airport! They are at a training weekend for the summer camp they are working at this summer! I was gonna gym it then, but ended up not having enough time! So I caught up on phone calls, did some reading, and relaxed in Starbucks before class! Apres class I had a big ol’ bowl of pasta salad while I rested/ worked on a presentation! Then it was gym time! today was lazy. due to  my feeling kinda shady! 45 minutes on  the elliptical doing hills, while watching Tuesday night’s Glee! Omg this episode…. it was so emotional… Glee you just continue to amaze

Then it was a quick jaunt to the mall, errands, and Zach time! traffic was so bad today we had to cut out our scheduled walk in the park :( ! Which was a shame as it was like 74 today! After leaving Zach and co, it was straight downtown to pick up Kathleen for Cinco festivities! We ended up at a chill Mexican restaurant with our friend Elizabeth. Nothing too crazy but that was needed! We feasted on yummy Mexican food… I had a Beef taco salad, warm, beefy, chessy, soooo good and exactly the comfort food I needed!!!

Then it was home to make STAR WARS COOKIES!!!! so excited! Now I am watching Star wars again and about to pass out…. I’m such a cool kid!

Also I came home and read Julie’s post about Rome… and I just really wanna go back to Italy!!! I miss it so much!!! There is nothing quite like sitting in an italian cafe with a book and a delicious glass of house wine! Even alone it is a wonderful experience!! That and all the history, art, the beautiful plazas, churches, and scenery! Ugh I want to go now!!!! Next year my mom and I are going to hike in Cinque Terre! It is off the coast near Tuscany… sooo beautiful!!!

“It’s Lady Gaga?”

I hate doing laundry/putting laundry away! Probably because I have more clothes than a normal person and it takes FOREVER…. blegh

Sorry that is enough whining!

Today Zach learned how to play soccer! We walked our usual 2.2 miles and then played soccer in the green!

Too cute right? Afterwards while waiting for dinner we were listening to music, T-Swift to be exact! And little one goes “It’s Lady Gaga?” hahahah I cracked up! He is too much! For dinner as per his request we went to Chipotle with Jess! Did you know Chipotle had brown rice now? I did not!! OMG sooo goood! I usually only get a salad but of course I had to try the brown rice! I forgot how much better burrito bowls are with rice! I forgot my phone so didn’t take a picture but if your local Chipotle has brown rice you gotta try it!!

After dinner I ran to Target and got munchkin a special present! A Little Tykes adjustable basketball hoop!! I am really excited about it! Then it was home to make Fudge Cookie Chocolate Cake!

Yes that is right… Chocolate Cake topped with Cookie Dough and covered in fudge frosting… drooling yet? Yea these babies were definitely testing my will power!

I used the Pioneer Woman recipe that Kristin posted a few days ago and just added cookie dough!
Ok I cheated and used store bought cookie dough.. but I wanted to try out Pillsbury Natural! All natural cookie dough so it tastes just like homemade! Or well I think it does but not sure since I can’t try it!

mm fudgy cookie cakey goodness! They are thin and I can tell very gooey on the inside! hopefully my classmates and professor enjoy them!

ok off to sleep! I have been so tired all day!

My Little Brother is Spoiled Rotten

Baby Bro Kev goes to CU Boulder, and it has become a tradition that everytime I come to Boulder I bring him and his roommates a treat… in fact they even told me that I am not allowed to come down with out one! See the spoiledness? (not a word oh well) However my dad is in town this weekend !!!!! and so tomorrow we are going to Boulder to see him!
I realized tonight when I got home from dinner at my Aunt Kathy’s house (highlight KU won, and my Grandma told me I wasn’t as smart as Sarah Palin… ouch?) that I needed to make the little brat best little bro ever something… Liza was more thank ok with this since she always reaps the benefits of my baking/cooking…. in the fact that our apartment smells amazing and she gets dibs!
I had a ton of cookie crumbs left over and was thinking of what to do.. when it hit me… cookie crusted brownies!!!
HUH?!? you may ask?

LAYER OF COOKIE CRUMBS

and for added effect marshmallows lightly toasted on top

I know…. sounds heavenly right? like a smore…. made out of brownies and choc chip cookies.. winning duh

I used left over cookies, so use whatever you have lying around be it home made cookies or store bought no judgements!

For the brownie I used a recipe from the Magnolia Bakery cookbook! Get this book! Seriously it will change your life even if you have never been to Magnolia’s in NYC… the redvelvet… OMG to die for!

Brownie:
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup (1/2 stick) unsalted butter, softened
1 cup sugar
2 large eggs, at room temperature
1 tablespoon plus 1 teaspoon vanilla extract
12 ounces semi-sweet chocolate, melted  ( or 8 and 2 oz dark or unsweetened!)

Melt butter and chocolate together and then let cool for about 5 minutes!

Mix eggs and sugar until light and smooth, add in vanilla and then chocolate mixture

Add in flour and pour on top of layer of cookie crumbs

top with cookie crumbs

when there are 5 minutes left top with marshmallows!

Let cool and enjoy!

ok it’s late and I am getting up at the crack of dawn tomorrow for new SPP babies! That’s right my program is having it’s interview weekend! So pumped… more to come tomorrow!
